- Chicory - 2 medium heads
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Gluten-free breadcrumbs - 50 grams
- Nutritional yeast - 3 tablespoons
- Almond milk - 200 ml
- All-purpose gluten-free flour - 2 tablespoons
- Vegetable broth - 100 ml
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/2 teaspoon
- Parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat your oven to 200°C (390°F).
- Cut the chicory heads in half lengthwise and remove any tough outer leaves.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- Sprinkle the gluten-free flour over the onions and garlic, stirring to combine. Cook for 1-2 minutes.
- Slowly pour in the almond milk and vegetable broth while whisking continuously to prevent lumps.
- Stir in the nutritional yeast, thyme, salt, black pepper, and paprika. Cook until the sauce thickens, about 5-7 minutes.
- In a baking dish, arrange the chicory halves cut side up. Pour the sauce evenly over the chicory.
- Sprinkle the gluten-free breadcrumbs on top of the sauce.
- Bake in the preheated oven for 20 minutes until the top is golden brown and crispy.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
