Ingredients

  • Chicory - 2 medium heads
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Gluten-free breadcrumbs - 50 grams
  • Nutritional yeast - 3 tablespoons
  • Almond milk - 200 ml
  • All-purpose gluten-free flour - 2 tablespoons
  • Vegetable broth - 100 ml
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat your oven to 200°C (390°F).
  2. Cut the chicory heads in half lengthwise and remove any tough outer leaves.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Sprinkle the gluten-free flour over the onions and garlic, stirring to combine. Cook for 1-2 minutes.
  6. Slowly pour in the almond milk and vegetable broth while whisking continuously to prevent lumps.
  7. Stir in the nutritional yeast, thyme, salt, black pepper, and paprika. Cook until the sauce thickens, about 5-7 minutes.
  8. In a baking dish, arrange the chicory halves cut side up. Pour the sauce evenly over the chicory.
  9. Sprinkle the gluten-free breadcrumbs on top of the sauce.
  10. Bake in the preheated oven for 20 minutes until the top is golden brown and crispy.
  11. Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
