- Water - 240 milliliters
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Smoked paprika - 1/2 teaspoon
- Fresh rosemary - 1 tablespoon, chopped
- Cherry tomatoes - 100 grams, halved
- Zucchini - 1 small, sliced
- Red onion - 1 small, sliced
Steps
- In a mixing bowl, whisk together chickpea flour, water, 1 tablespoon of olive oil, salt, black pepper, and smoked paprika until smooth. Let the batter rest for 20 minutes.
- Preheat your BBQ grill to medium heat. Coat a cast iron skillet or a baking tray with the remaining tablespoon of olive oil and place it on the grill to heat up.
- Once the skillet is hot, pour the chickpea batter into the skillet, ensuring it covers the base evenly.
- Scatter the chopped rosemary, cherry tomatoes, zucchini, and red onion on top of the batter.
- Close the grill lid and cook for about 10-15 minutes, or until the edges are crispy and the top is set.
- Carefully remove the socca from the grill and let it cool for a couple of minutes before slicing into wedges.
- Serve warm, drizzled with a little extra olive oil and a sprinkle of salt, if desired.
