Ingredients

  • Chickpea flour - 120 grams
  • Water - 240 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground black pepper - 1/2 teaspoon
  • Smoked paprika - 1/2 teaspoon
  • Fresh rosemary - 1 tablespoon, chopped
  • Cherry tomatoes - 100 grams, halved
  • Zucchini - 1 small, sliced
  • Red onion - 1 small, sliced

Steps

  1. In a mixing bowl, whisk together chickpea flour, water, 1 tablespoon of olive oil, salt, black pepper, and smoked paprika until smooth. Let the batter rest for 20 minutes.
  2. Preheat your BBQ grill to medium heat. Coat a cast iron skillet or a baking tray with the remaining tablespoon of olive oil and place it on the grill to heat up.
  3. Once the skillet is hot, pour the chickpea batter into the skillet, ensuring it covers the base evenly.
  4. Scatter the chopped rosemary, cherry tomatoes, zucchini, and red onion on top of the batter.
  5. Close the grill lid and cook for about 10-15 minutes, or until the edges are crispy and the top is set.
  6. Carefully remove the socca from the grill and let it cool for a couple of minutes before slicing into wedges.
  7. Serve warm, drizzled with a little extra olive oil and a sprinkle of salt, if desired.
