Ingredients

  • chickpea flour - 150 grams
  • water - 500 milliliters
  • olive oil - 2 tablespoons
  • garlic powder - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • dried thyme - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • lemon juice - 1 tablespoon
  • avocado oil (for grilling) - 2 tablespoons

Steps

  1. In a medium saucepan, bring the water to a boil. Once boiling, reduce the heat to medium.
  2. Gradually whisk in the chickpea flour, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 5-7 minutes.
  3. Add olive oil, garlic powder, smoked paprika, thyme, salt, and black pepper to the chickpea mixture. Mix well to combine.
  4. Remove from heat and stir in the chopped parsley and lemon juice.
  5. Pour the mixture into a greased square or rectangular dish (about 20x20 cm). Spread it evenly and smooth the top with a spatula.
  6. Allow the chickpea mixture to cool at room temperature for at least 15-20 minutes, then cover and refrigerate for at least 1 hour to firm up.
  7. Once firm, cut the panisse into desired shapes (squares or rectangles).
  8. Preheat a grill or grill pan over medium heat and brush lightly with avocado oil.
  9. Grill the panisse pieces for about 3-4 minutes on each side, or until golden and crispy.
  10. Serve warm with your favorite dipping sauce or salad.
