- chickpea flour - 150 grams
- water - 500 milliliters
- olive oil - 2 tablespoons
- garlic powder - 1 teaspoon
- smoked paprika - 1 teaspoon
- dried thyme - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fresh parsley - 2 tablespoons, chopped
- lemon juice - 1 tablespoon
- avocado oil (for grilling) - 2 tablespoons
Steps
- In a medium saucepan, bring the water to a boil. Once boiling, reduce the heat to medium.
- Gradually whisk in the chickpea flour, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 5-7 minutes.
- Add olive oil, garlic powder, smoked paprika, thyme, salt, and black pepper to the chickpea mixture. Mix well to combine.
- Remove from heat and stir in the chopped parsley and lemon juice.
- Pour the mixture into a greased square or rectangular dish (about 20x20 cm). Spread it evenly and smooth the top with a spatula.
- Allow the chickpea mixture to cool at room temperature for at least 15-20 minutes, then cover and refrigerate for at least 1 hour to firm up.
- Once firm, cut the panisse into desired shapes (squares or rectangles).
- Preheat a grill or grill pan over medium heat and brush lightly with avocado oil.
- Grill the panisse pieces for about 3-4 minutes on each side, or until golden and crispy.
- Serve warm with your favorite dipping sauce or salad.
