Ingredients

  • chickpea flour - 100 grams
  • water - 250 milliliters
  • olive oil - 2 tablespoons
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • ground cumin - 1/2 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • lemon juice - 1 tablespoon
  • vegan yogurt - for serving (optional)

Steps

  1. In a mixing bowl, combine chickpea flour, water, 1 tablespoon of olive oil, salt, black pepper, and ground cumin. Whisk until smooth and let the batter rest for 15 minutes.
  2. Preheat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Once hot, pour half of the batter into the skillet, swirling to spread it evenly.
  4. Cook for about 3-4 minutes, or until the edges start to lift and the bottom is golden brown.
  5. Carefully flip the pancake and cook for an additional 2-3 minutes until browned on the other side.
  6. Remove from the skillet and keep warm. Repeat the process with the remaining batter.
  7. Serve the chickpea pancakes warm, garnished with chopped parsley and a drizzle of lemon juice. Optionally, add vegan yogurt on the side.
