- chickpea flour - 100 grams
- water - 250 milliliters
- olive oil - 2 tablespoons
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- ground cumin - 1/2 teaspoon
- fresh parsley - 2 tablespoons, chopped
- lemon juice - 1 tablespoon
- vegan yogurt - for serving (optional)
Steps
- In a mixing bowl, combine chickpea flour, water, 1 tablespoon of olive oil, salt, black pepper, and ground cumin. Whisk until smooth and let the batter rest for 15 minutes.
- Preheat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Once hot, pour half of the batter into the skillet, swirling to spread it evenly.
- Cook for about 3-4 minutes, or until the edges start to lift and the bottom is golden brown.
- Carefully flip the pancake and cook for an additional 2-3 minutes until browned on the other side.
- Remove from the skillet and keep warm. Repeat the process with the remaining batter.
- Serve the chickpea pancakes warm, garnished with chopped parsley and a drizzle of lemon juice. Optionally, add vegan yogurt on the side.
