  • Fresh spinach - 100 grams (chopped)
  • Red onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)
  • All-purpose flour - 2 tablespoons
  • Olive oil - 1 tablespoon (for brushing)
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a large mixing bowl, combine the drained chickpeas, chopped spinach, red onion, minced garlic, cumin, coriander, paprika, salt, black pepper, and fresh parsley.
  2. Using a fork or a potato masher, mash the mixture until it is well combined but still has some texture.
  3. Add the all-purpose flour to the mixture to help bind it together, and mix well.
  4. Divide the mixture into four equal portions and form each portion into a patty or a log shape around the soaked wooden skewers.
  5. Preheat your grill or BBQ to medium heat and brush the kebabs lightly with olive oil.
  6. Place the kebabs on the grill and cook for about 10-12 minutes, turning occasionally until they are golden brown and heated through.
