Ingredients

  • Chicken thighs - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Kalamata olives - 100 grams, pitted and halved
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced

Steps

  1. In a bowl, combine the olive oil, minced garlic, lemon juice, salt, black pepper, thyme, and rosemary to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium heat.
  4. Place the marinated chicken thighs on the grill and cook for about 15 minutes on each side, or until the internal temperature reaches 75°C.
  5. In the last 5 minutes of cooking, add the halved cherry tomatoes and olives to the grill and allow them to char slightly.
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
  7. Serve the grilled chicken with the charred tomatoes and olives on top.
