- Chicken thighs - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Kalamata olives - 100 grams, pitted and halved
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon - 1, juiced
Steps
- In a bowl, combine the olive oil, minced garlic, lemon juice, salt, black pepper, thyme, and rosemary to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
- Preheat the grill to medium heat.
- Place the marinated chicken thighs on the grill and cook for about 15 minutes on each side, or until the internal temperature reaches 75°C.
- In the last 5 minutes of cooking, add the halved cherry tomatoes and olives to the grill and allow them to char slightly.
- Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.
- Serve the grilled chicken with the charred tomatoes and olives on top.
