- all-purpose flour - 200 grams
- coconut oil - 100 grams (solid)
- maple syrup - 2 tablespoons
- cold water - 4 tablespoons
- apples - 2 medium (about 300 grams, peeled and chopped)
- cinnamon - 1 teaspoon
- nutmeg - 1/4 teaspoon
- lemon juice - 1 tablespoon
- brown sugar - 1 tablespoon
- plant-based milk - for brushing
Steps
- In a mixing bowl, combine the flour and solid coconut oil. Use your fingers to rub the coconut oil into the flour until it resembles coarse crumbs.
- Add the maple syrup and cold water, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Meanwhile, prepare the filling by cooking the chopped apples in a saucepan over medium heat with cinnamon, nutmeg, lemon juice, and brown sugar. Cook for about 10 minutes, until the apples are tender. Remove from heat and let cool.
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 3 mm thick. Cut out circles of about 10-12 cm in diameter.
- Place a spoonful of the apple filling on one half of each dough circle. Fold the other half over to create a crescent shape, sealing the edges with a fork.
- Brush the tops of the pastries with plant-based milk for a golden finish.
- Bake in the preheated oven for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
