Ingredients

  • Beef tenderloin - 500 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Fresh thyme - 2 sprigs
  • Butter - 30 grams
  • Red wine - 100 ml
  • Beef broth - 100 ml
  • Shallots - 1, finely chopped

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Season the beef tenderloin with salt and black pepper on all sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  4. Sear the beef tenderloin for 2-3 minutes on each side until browned.
  5. Add minced garlic and fresh thyme to the skillet.
  6. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 55°C (130°F) for medium-rare.
  7. Remove the skillet from the oven and let the beef rest for 10 minutes.
  8. In the same skillet, add butter and shallots over medium heat, cooking until softened.
  9. Pour in the red wine and beef broth, scraping up any browned bits. Let it reduce for about 5-7 minutes until slightly thickened.
  10. Slice the beef tenderloin and serve with the red wine sauce drizzled on top.
