- Beef tenderloin - 500 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Garlic - 2 cloves, minced
- Fresh thyme - 2 sprigs
- Butter - 30 grams
- Red wine - 100 ml
- Beef broth - 100 ml
- Shallots - 1, finely chopped
Steps
- Preheat the oven to 200°C (390°F).
- Season the beef tenderloin with salt and black pepper on all sides.
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Sear the beef tenderloin for 2-3 minutes on each side until browned.
- Add minced garlic and fresh thyme to the skillet.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 55°C (130°F) for medium-rare.
- Remove the skillet from the oven and let the beef rest for 10 minutes.
- In the same skillet, add butter and shallots over medium heat, cooking until softened.
- Pour in the red wine and beef broth, scraping up any browned bits. Let it reduce for about 5-7 minutes until slightly thickened.
- Slice the beef tenderloin and serve with the red wine sauce drizzled on top.
