- Parmesan cheese - 30 grams, grated
- Fresh parsley - for garnish
Steps
- Prepare the cardoons by peeling the tough outer layer and cutting them into 5 cm pieces. Place them in water with lemon juice to prevent browning.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 5 minutes.
- Drain the cardoons and add them to the skillet. Sauté for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a simmer. Cover and cook for about 15 minutes, or until the cardoons are tender.
- Reduce the heat to low and stir in the heavy cream. Season with nutmeg, salt, and pepper. Allow the mixture to heat through for about 5 minutes.
- Sprinkle the grated Parmesan cheese over the top, stirring gently until melted and incorporated.
- Serve hot, garnished with fresh parsley.
