  • Vegetable broth - 150 ml
  • Nutmeg - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - for garnish

Steps

  1. Prepare the cardoons by peeling the tough outer layer and cutting them into 5 cm pieces. Place them in water with lemon juice to prevent browning.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 5 minutes.
  3. Drain the cardoons and add them to the skillet. Sauté for another 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a simmer. Cover and cook for about 15 minutes, or until the cardoons are tender.
  5. Reduce the heat to low and stir in the heavy cream. Season with nutmeg, salt, and pepper. Allow the mixture to heat through for about 5 minutes.
  6. Sprinkle the grated Parmesan cheese over the top, stirring gently until melted and incorporated.
