- Egg - 1 large
- Breadcrumbs - 100 grams
- Vegetable oil - 250 ml (for frying)
- Lemon juice - 2 tablespoons
- Dijon mustard - 1 teaspoon
- Olive oil - 3 tablespoons
- Fresh parsley - 2 tablespoons (chopped)
Steps
- Prepare the artichoke hearts by draining and patting them dry with paper towels.
- In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
- In another bowl, beat the egg and set aside.
- Place the breadcrumbs in a third bowl.
- Dredge each artichoke heart in the flour mixture, then dip into the beaten egg, and finally coat with breadcrumbs.
- In a frying pan, heat the vegetable oil over medium heat until hot.
- Fry the breaded artichoke hearts in batches, cooking for about 3-4 minutes on each side until golden brown and crispy.
- Remove from the oil and drain on paper towels.
- In a small bowl, whisk together the lemon juice, Dijon mustard, and olive oil to make the vinaigrette.
- Serve the crispy artichoke hearts drizzled with vinaigrette and garnished with chopped parsley.
