  • Artichoke hearts - 200 grams (canned or jarred, drained)
  • All-purpose flour - 50 grams
  • Cornstarch - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1 large
  • Breadcrumbs - 100 grams
  • Vegetable oil - 250 ml (for frying)
  • Lemon juice - 2 tablespoons
  • Dijon mustard - 1 teaspoon
  • Olive oil - 3 tablespoons
  • Fresh parsley - 2 tablespoons (chopped)

Steps

  1. Prepare the artichoke hearts by draining and patting them dry with paper towels.
  2. In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
  3. In another bowl, beat the egg and set aside.
  4. Place the breadcrumbs in a third bowl.
  5. Dredge each artichoke heart in the flour mixture, then dip into the beaten egg, and finally coat with breadcrumbs.
  6. In a frying pan, heat the vegetable oil over medium heat until hot.
  7. Fry the breaded artichoke hearts in batches, cooking for about 3-4 minutes on each side until golden brown and crispy.
  8. Remove from the oil and drain on paper towels.
  9. In a small bowl, whisk together the lemon juice, Dijon mustard, and olive oil to make the vinaigrette.
  10. Serve the crispy artichoke hearts drizzled with vinaigrette and garnished with chopped parsley.
