Ingredients

  • Chickpea flour - 100 grams
  • Water - 150 ml
  • Olive oil - 1 tablespoon

  • Onion powder - 1 teaspoon
  • Smoked paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine the chickpea flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Gradually add the water while whisking until the batter is smooth and free of lumps.
  3. Stir in the chopped parsley and lemon juice, mixing well to combine.
  4. Heat a non-stick skillet over medium heat and add the olive oil.
  5. Once the oil is hot, pour a ladleful of the batter into the skillet, spreading it into a thin layer.
  6. Cook for about 3-4 minutes until the edges start to crisp and the bottom is golden brown.
  7. Flip the chardon and cook for an additional 2-3 minutes on the other side until golden.
  8. Repeat with the remaining batter, adding more oil to the skillet as needed.
  9. Serve warm with your favorite dipping sauce or enjoy them plain.
