Ingredients

  • All-purpose flour - 150 grams
  • Olive oil - 60 ml
  • Cold water - 50 ml
  • Swiss chard - 200 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Nutritional yeast - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh thyme - 1 teaspoon, chopped
  • Vegan egg replacer - 1 tablespoon mixed with 3 tablespoons water
  • Pine nuts - 30 grams, toasted

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine the flour and salt, then add olive oil and cold water. Mix until a dough forms. Knead lightly, wrap in plastic, and refrigerate for 30 minutes.
  3. In a skillet, heat a tablespoon of olive oil over medium heat. Add the onion and garlic, sautéing until soft and translucent.
  4. Add the chopped Swiss chard to the skillet and cook until wilted. Stir in nutritional yeast, thyme, salt, and pepper. Remove from heat and let cool slightly.
  5. Roll out the chilled dough on a floured surface to fit a 20 cm (8-inch) pie dish. Transfer the dough to the dish, trimming any excess.
  6. In a bowl, mix the vegan egg replacer with the sautéed chard mixture until well combined. Stir in toasted pine nuts.
  7. Pour the chard filling into the prepared crust, spreading it evenly.
  8. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  9. Allow the pie to cool for a few minutes before slicing and serving.
