- All-purpose flour - 150 grams
- Olive oil - 60 ml
- Cold water - 50 ml
- Swiss chard - 200 grams, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Nutritional yeast - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh thyme - 1 teaspoon, chopped
- Vegan egg replacer - 1 tablespoon mixed with 3 tablespoons water
- Pine nuts - 30 grams, toasted
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine the flour and salt, then add olive oil and cold water. Mix until a dough forms. Knead lightly, wrap in plastic, and refrigerate for 30 minutes.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add the onion and garlic, sautéing until soft and translucent.
- Add the chopped Swiss chard to the skillet and cook until wilted. Stir in nutritional yeast, thyme, salt, and pepper. Remove from heat and let cool slightly.
- Roll out the chilled dough on a floured surface to fit a 20 cm (8-inch) pie dish. Transfer the dough to the dish, trimming any excess.
- In a bowl, mix the vegan egg replacer with the sautéed chard mixture until well combined. Stir in toasted pine nuts.
- Pour the chard filling into the prepared crust, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- Allow the pie to cool for a few minutes before slicing and serving.
