Ingredients

  • Swiss chard - 200 grams
  • Potatoes - 300 grams
  • Raw cashews - 100 grams
  • Garlic - 2 cloves
  • Nutritional yeast - 2 tablespoons
  • Almond milk - 200 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Thyme (dried) - 1 teaspoon
  • Nutmeg (ground) - 1/4 teaspoon
  • Breadcrumbs - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Soak the raw cashews in water for at least 2 hours, then drain and rinse.
  3. Peel the potatoes and slice them thinly (about 3 mm thick). Set aside.
  4. Remove the stems from the Swiss chard and chop the leaves roughly.
  5. In a pan, heat 1 tablespoon of olive oil over medium heat, add minced garlic and sauté for 1 minute until fragrant.
  6. Add the chopped Swiss chard to the pan, season with salt and pepper, and cook until wilted (about 5 minutes). Remove from heat.
  7. In a blender, combine the soaked cashews, almond milk, nutritional yeast, thyme, nutmeg, and a bit of salt and pepper. Blend until smooth and creamy.
  8. In a baking dish, layer half of the potato slices, followed by half of the chard mixture, and half of the cashew cream. Repeat the layers with the remaining ingredients.
  9. Sprinkle breadcrumbs on top and drizzle with the remaining olive oil.
  10. Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes until golden and bubbly.
  11. Let it cool for a few minutes before serving.
