Ingredients
- Swiss chard - 200 grams
- Potatoes - 300 grams
- Raw cashews - 100 grams
- Garlic - 2 cloves
- Nutritional yeast - 2 tablespoons
- Almond milk - 200 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Thyme (dried) - 1 teaspoon
- Nutmeg (ground) - 1/4 teaspoon
- Breadcrumbs - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- Soak the raw cashews in water for at least 2 hours, then drain and rinse.
- Peel the potatoes and slice them thinly (about 3 mm thick). Set aside.
- Remove the stems from the Swiss chard and chop the leaves roughly.
- In a pan, heat 1 tablespoon of olive oil over medium heat, add minced garlic and sauté for 1 minute until fragrant.
- Add the chopped Swiss chard to the pan, season with salt and pepper, and cook until wilted (about 5 minutes). Remove from heat.
- In a blender, combine the soaked cashews, almond milk, nutritional yeast, thyme, nutmeg, and a bit of salt and pepper. Blend until smooth and creamy.
- In a baking dish, layer half of the potato slices, followed by half of the chard mixture, and half of the cashew cream. Repeat the layers with the remaining ingredients.
- Sprinkle breadcrumbs on top and drizzle with the remaining olive oil.
- Cover the dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes until golden and bubbly.
- Let it cool for a few minutes before serving.
