Ingredients

  • All-purpose flour - 150 grams
  • Cold water - 60 ml
  • Salt - 1/2 teaspoon
  • Vegan butter - 75 grams
  • Potato - 150 grams, peeled and thinly sliced
  • Swiss chard - 150 grams, chopped
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Black pepper - to taste
  • Nutmeg - a pinch

Steps

  1. In a bowl, combine the flour and salt. Cut in the cold vegan butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, stirring until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 1 minute.
  4. Add the chopped Swiss chard and cook until wilted, about 3-4 minutes. Season with black pepper and nutmeg, then remove from heat.
  5. Preheat the oven to 200°C (400°F). Roll out the dough on a floured surface into a 12-inch circle.
  6. Transfer the rolled dough to a baking sheet lined with parchment paper.
  7. Layer the potato slices in the center of the dough, leaving a 2-inch border. Top with the sautéed chard mixture.
  8. Fold the edges of the dough over the filling, pleating as necessary to create a rustic edge.
  9. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
  10. Allow to cool slightly before slicing and serving.
