- Cold water - 60 ml
- Salt - 1/2 teaspoon
- Vegan butter - 75 grams
- Potato - 150 grams, peeled and thinly sliced
- Swiss chard - 150 grams, chopped
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Black pepper - to taste
- Nutmeg - a pinch
Steps
- In a bowl, combine the flour and salt. Cut in the cold vegan butter until the mixture resembles coarse crumbs.
- Gradually add cold water, stirring until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
- In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 1 minute.
- Add the chopped Swiss chard and cook until wilted, about 3-4 minutes. Season with black pepper and nutmeg, then remove from heat.
- Preheat the oven to 200°C (400°F). Roll out the dough on a floured surface into a 12-inch circle.
- Transfer the rolled dough to a baking sheet lined with parchment paper.
- Layer the potato slices in the center of the dough, leaving a 2-inch border. Top with the sautéed chard mixture.
- Fold the edges of the dough over the filling, pleating as necessary to create a rustic edge.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
- Allow to cool slightly before slicing and serving.
