Ingredients

  • Goat cheese - 100 grams
  • Baguette - 2 slices
  • Mixed salad greens (arugula, spinach, frisée) - 100 grams
  • Cherry tomatoes - 100 grams
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh herbs (thyme or basil) - to garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the baguette into 1 cm thick slices and place them on a baking sheet.
  3. Cut the goat cheese into rounds and place one round on each slice of baguette.
  4. Bake in the preheated oven for about 5-7 minutes or until the cheese is warm and slightly golden.
  5. While the cheese is baking, prepare the salad by combining the mixed greens and halved cherry tomatoes in a large bowl.
  6. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
  7. Drizzle the dressing over the salad and toss gently to combine.
  8. Once the goat cheese is ready, remove it from the oven and place the warm slices on top of the salad.
  9. Garnish with fresh herbs and serve immediately.
