- Baguette - 2 slices

- Balsamic vinegar - 1 tablespoon
- Honey - 1 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh herbs (thyme or basil) - to garnish
Steps
- Preheat the oven to 180°C (350°F).
- Slice the baguette into 1 cm thick slices and place them on a baking sheet.
- Cut the goat cheese into rounds and place one round on each slice of baguette.
- Bake in the preheated oven for about 5-7 minutes or until the cheese is warm and slightly golden.
- While the cheese is baking, prepare the salad by combining the mixed greens and halved cherry tomatoes in a large bowl.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and black pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Once the goat cheese is ready, remove it from the oven and place the warm slices on top of the salad.
- Garnish with fresh herbs and serve immediately.
