Ingredients

  • Celeriac - 400 grams
  • Garlic - 4 cloves, thinly sliced
  • Extra virgin olive oil - 4 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 20 grams, grated

Steps

  1. Peel the celeriac and slice it into thin strips resembling spaghetti using a spiralizer or a vegetable peeler.
  2. Bring a large pot of salted water to a boil. Add the celeriac 'spaghetti' and cook for 3-4 minutes until slightly tender. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, cooking for about 2 minutes until the garlic is golden and fragrant, but not burnt.
  4. Add the drained celeriac spaghetti to the skillet. Toss gently to combine with the garlic oil, and cook for an additional 2-3 minutes to heat through.
  5. Season with salt and black pepper to taste, and remove from heat.
  6. Stir in the chopped parsley and serve immediately, topped with grated Parmesan cheese if desired.
