Ingredients
- Celeriac - 400 grams
- Garlic - 4 cloves, thinly sliced
- Extra virgin olive oil - 4 tablespoons
- Red pepper flakes - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - 20 grams, grated
Steps
- Peel the celeriac and slice it into thin strips resembling spaghetti using a spiralizer or a vegetable peeler.
- Bring a large pot of salted water to a boil. Add the celeriac 'spaghetti' and cook for 3-4 minutes until slightly tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and red pepper flakes, cooking for about 2 minutes until the garlic is golden and fragrant, but not burnt.
- Add the drained celeriac spaghetti to the skillet. Toss gently to combine with the garlic oil, and cook for an additional 2-3 minutes to heat through.
- Season with salt and black pepper to taste, and remove from heat.
- Stir in the chopped parsley and serve immediately, topped with grated Parmesan cheese if desired.
