- Zucchini - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Fresh basil - 1 tablespoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Wash and cut the zucchini into quarters lengthwise, then place them on a baking tray.
- Drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper.
- Roast in the preheated oven for 20-25 minutes, or until the zucchini is tender and lightly browned.
- Once roasted, let the zucchini cool for a few minutes before transferring to a food processor.
- Add the minced garlic, chopped basil, chopped parsley, lemon juice, and the remaining tablespoon of olive oil to the food processor.
- Blend until smooth and creamy, scraping down the sides as necessary.
- Taste and adjust seasoning with more salt and pepper if needed.
- Serve the caviar de courgette with toasted bread or vegetable sticks.
