Ingredients

  • Zucchini - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Fresh basil - 1 tablespoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and cut the zucchini into quarters lengthwise, then place them on a baking tray.
  3. Drizzle with 1 tablespoon of olive oil and sprinkle with salt and pepper.
  4. Roast in the preheated oven for 20-25 minutes, or until the zucchini is tender and lightly browned.
  5. Once roasted, let the zucchini cool for a few minutes before transferring to a food processor.
  6. Add the minced garlic, chopped basil, chopped parsley, lemon juice, and the remaining tablespoon of olive oil to the food processor.
  7. Blend until smooth and creamy, scraping down the sides as necessary.
  8. Taste and adjust seasoning with more salt and pepper if needed.
  9. Serve the caviar de courgette with toasted bread or vegetable sticks.
