  • Grated Gruyère cheese - 100 grams
  • Garlic - 2 cloves, minced
  • Nutmeg - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a pot, bring salted water to a boil and blanch the cauliflower florets for about 5 minutes until slightly tender. Drain and set aside.

  4. Add the heavy cream to the saucepan, stirring in the nutmeg, salt, and black pepper. Bring to a gentle simmer.
  5. Stir in the grated Gruyère cheese until melted and smooth, then remove from heat.
  6. In a baking dish, layer the blanched cauliflower florets and pour the cheese sauce over them, ensuring all pieces are covered.
  7. Sprinkle the grated Parmesan cheese on top for a crispy finish.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes before serving.
