- Dried white beans (such as Great Northern or cannellini) - 150 grams
- Olive oil - 2 tablespoons
- Onion, chopped - 1 medium
- Garlic, minced - 3 cloves
- Carrot, diced - 1 medium
- Celery, diced - 1 stalk
- Smoked kosher sausage, sliced - 150 grams
- Duck breast, skinless and diced - 150 grams
- Chicken breast, diced - 150 grams
- Tomato paste - 1 tablespoon
- Fresh thyme - 1 teaspoon
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 500 milliliters
- Fresh parsley, chopped (for garnish) - 2 tablespoons
Steps
- Soak the dried white beans in water overnight, or for at least 8 hours. Drain and rinse before using.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until the vegetables are soft, about 5-7 minutes.
- Add the smoked sausage, duck breast, and chicken breast to the pot. Cook until the meats are browned, about 5-8 minutes.
- Stir in the tomato paste, fresh thyme, bay leaf, salt, and black pepper. Mix well to combine.
- Add the soaked beans and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and let simmer for about 1 to 1.5 hours, or until the beans and meats are tender.
- Check occasionally, adding more broth or water if necessary to keep the mixture from drying out.
- Once cooked, remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with fresh parsley.
