Ingredients

  • Cannellini beans - 200 grams, soaked overnight
  • Pork shoulder - 150 grams, cubed
  • Duck legs - 2 pieces
  • Smoked sausage - 100 grams, sliced
  • Carrot - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and carrot, and sauté until soft, about 5 minutes.
  2. Add minced garlic, pork shoulder, and smoked sausage to the pot. Brown the meat on all sides for about 8-10 minutes.
  3. Stir in the tomato paste, thyme, bay leaf, salt, and pepper. Cook for another 2 minutes.
  4. Add the soaked and drained cannellini beans and pour in the chicken broth. Bring to a boil, then reduce heat to low.
  5. Add the duck legs to the pot, cover, and let it simmer for about 1.5 hours, stirring occasionally, until the beans are tender and the flavors meld.
  6. Check for seasoning and adjust salt and pepper as needed. Remove the duck legs, shred the meat, and return it to the pot.
  7. Serve hot, garnished with fresh parsley.
