- Cannellini beans - 200 grams, soaked overnight
- Pork shoulder - 150 grams, cubed
- Duck legs - 2 pieces
- Smoked sausage - 100 grams, sliced
- Carrot - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Chicken broth - 500 ml
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and carrot, and sauté until soft, about 5 minutes.
- Add minced garlic, pork shoulder, and smoked sausage to the pot. Brown the meat on all sides for about 8-10 minutes.
- Stir in the tomato paste, thyme, bay leaf, salt, and pepper. Cook for another 2 minutes.
- Add the soaked and drained cannellini beans and pour in the chicken broth. Bring to a boil, then reduce heat to low.
- Add the duck legs to the pot, cover, and let it simmer for about 1.5 hours, stirring occasionally, until the beans are tender and the flavors meld.
- Check for seasoning and adjust salt and pepper as needed. Remove the duck legs, shred the meat, and return it to the pot.
- Serve hot, garnished with fresh parsley.
