- Vegetable broth - 200 ml
- Heavy cream - 100 ml
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
- Breadcrumbs - 2 tablespoons (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the diced zucchini, bell pepper, carrot, and sliced mushrooms to the skillet. Sauté for about 5-7 minutes until the vegetables are slightly softened.
- Pour in the vegetable broth and heavy cream. Stir in the thyme, salt, and black pepper. Let it simmer for 10 minutes, allowing the flavors to meld.
- Transfer the vegetable mixture into two small oven-safe casseroles or ramekins.
- If using, sprinkle grated Parmesan cheese and breadcrumbs on top of each casserole.
- Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool slightly before serving.
