  • Garlic - 2 cloves, minced
  • Vegetable broth - 200 ml
  • Heavy cream - 100 ml
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated (optional)
  • Breadcrumbs - 2 tablespoons (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the diced zucchini, bell pepper, carrot, and sliced mushrooms to the skillet. Sauté for about 5-7 minutes until the vegetables are slightly softened.
  4. Pour in the vegetable broth and heavy cream. Stir in the thyme, salt, and black pepper. Let it simmer for 10 minutes, allowing the flavors to meld.
  5. Transfer the vegetable mixture into two small oven-safe casseroles or ramekins.
  6. If using, sprinkle grated Parmesan cheese and breadcrumbs on top of each casserole.
  7. Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
  8. Remove from the oven and let it cool slightly before serving.
