- Butter - 25 grams
- All-purpose flour - 1 tablespoon
- Vegetable broth - 200 milliliters
- Heavy cream - 100 milliliters
- Fresh thyme - 1 teaspoon, chopped
- Fresh parsley - 1 tablespoon, chopped
- Salt - to taste
- Black pepper - to taste
- Breadcrumbs - 50 grams
- Grated Gruyère cheese - 30 grams (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil and butter over medium heat. Add the shallot and garlic, sautéing until translucent.
- Add the chopped mushrooms to the skillet and cook until they release their moisture and begin to brown, about 5-7 minutes.
- Sprinkle the flour over the mushrooms and stir well to combine, cooking for another 2 minutes to remove the raw flour taste.
- Gradually pour in the vegetable broth, stirring constantly until the mixture thickens.
- Add the heavy cream, thyme, parsley, salt, and black pepper to the skillet, stirring to combine. Cook for an additional 2-3 minutes.
- Transfer the mushroom mixture into two individual ramekins or a small baking dish.
- In a separate bowl, mix the breadcrumbs and grated Gruyère cheese (if using). Sprinkle this mixture evenly over the mushroom filling.
- Bake in the preheated oven for 20 minutes, or until the top is golden and crispy.
- Remove from the oven and let cool for a few minutes before serving.
