  • Shallot - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Butter - 25 grams
  • All-purpose flour - 1 tablespoon
  • Vegetable broth - 200 milliliters
  • Heavy cream - 100 milliliters
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Breadcrumbs - 50 grams
  • Grated Gruyère cheese - 30 grams (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil and butter over medium heat. Add the shallot and garlic, sautéing until translucent.
  3. Add the chopped mushrooms to the skillet and cook until they release their moisture and begin to brown, about 5-7 minutes.
  4. Sprinkle the flour over the mushrooms and stir well to combine, cooking for another 2 minutes to remove the raw flour taste.
  5. Gradually pour in the vegetable broth, stirring constantly until the mixture thickens.
  6. Add the heavy cream, thyme, parsley, salt, and black pepper to the skillet, stirring to combine. Cook for an additional 2-3 minutes.
  7. Transfer the mushroom mixture into two individual ramekins or a small baking dish.
  8. In a separate bowl, mix the breadcrumbs and grated Gruyère cheese (if using). Sprinkle this mixture evenly over the mushroom filling.
  9. Bake in the preheated oven for 20 minutes, or until the top is golden and crispy.
  10. Remove from the oven and let cool for a few minutes before serving.
