Ingredients

  • 500g ground chicken
  • 2 tbsp Dijon mustard
  • 1 tbsp fresh thyme, chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 2 whole grain burger buns
  • 100g goat cheese, crumbled
  • 50g arugula
  • 30g blackcurrant jam (cassis)
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil

Steps

  1. In a mixing bowl, combine ground chicken, Dijon mustard, thyme, minced garlic, salt, and pepper. Mix until well combined.
  2. Divide the mixture into two equal portions and shape them into patties.
  3. Preheat a grill pan or skillet over medium heat and add a drizzle of olive oil.
  4. Cook the patties for about 6-7 minutes on each side or until they reach an internal temperature of 75°C (165°F).
  5. In a small bowl, mix the blackcurrant jam with balsamic vinegar to create the cassis sauce.
  6. Toast the whole grain burger buns on the grill pan for about 1-2 minutes until golden brown.
  7. Assemble the burgers by placing a chicken patty on the bottom half of each bun, topping it with crumbled goat cheese, arugula, and a generous spoonful of the cassis sauce.
  8. Close the burgers with the top half of the buns and serve immediately.
