- 500g ground chicken
- 2 tbsp Dijon mustard
- 1 tbsp fresh thyme, chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- 2 whole grain burger buns
- 100g goat cheese, crumbled
- 50g arugula
- 30g blackcurrant jam (cassis)
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
Steps
- In a mixing bowl, combine ground chicken, Dijon mustard, thyme, minced garlic, salt, and pepper. Mix until well combined.
- Divide the mixture into two equal portions and shape them into patties.
- Preheat a grill pan or skillet over medium heat and add a drizzle of olive oil.
- Cook the patties for about 6-7 minutes on each side or until they reach an internal temperature of 75°C (165°F).
- In a small bowl, mix the blackcurrant jam with balsamic vinegar to create the cassis sauce.
- Toast the whole grain burger buns on the grill pan for about 1-2 minutes until golden brown.
- Assemble the burgers by placing a chicken patty on the bottom half of each bun, topping it with crumbled goat cheese, arugula, and a generous spoonful of the cassis sauce.
- Close the burgers with the top half of the buns and serve immediately.
