Ingredients

  • All-purpose flour - 150 grams
  • Vegan butter - 75 grams
  • Cold water - 50 milliliters
  • Yellow onions - 2 medium (about 300 grams)
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried thyme)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons (optional for flavor)

Steps

  1. In a bowl, combine the all-purpose flour and salt. Cut in the vegan butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, mixing until the dough comes together. Shape it into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. While the dough is chilling, slice the onions thinly.
  4. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and salt, stirring occasionally for about 20 minutes until they are soft and golden brown.
  5. Stir in the balsamic vinegar and thyme, cooking for an additional 5 minutes until the onions are well caramelized. Remove from heat and let cool slightly.
  6. Preheat the oven to 200°C (400°F).
  7. Roll out the chilled dough on a lightly floured surface into a circle about 3 mm thick. Transfer it to a tart pan or a baking sheet lined with parchment paper.
  8. Spread the caramelized onions evenly over the crust. Sprinkle with black pepper and nutritional yeast, if using.
  9. Bake in the preheated oven for 25-30 minutes until the crust is golden and crispy.
  10. Remove from the oven and allow to cool for a few minutes before slicing. Serve warm, garnished with additional fresh thyme if desired.
