- All-purpose flour - 150 grams
- Vegan butter - 75 grams
- Cold water - 50 milliliters
- Yellow onions - 2 medium (about 300 grams)
- Olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried thyme)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutritional yeast - 2 tablespoons (optional for flavor)
Steps
- In a bowl, combine the all-purpose flour and salt. Cut in the vegan butter until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until the dough comes together. Shape it into a disk, wrap in plastic, and refrigerate for 30 minutes.
- While the dough is chilling, slice the onions thinly.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and salt, stirring occasionally for about 20 minutes until they are soft and golden brown.
- Stir in the balsamic vinegar and thyme, cooking for an additional 5 minutes until the onions are well caramelized. Remove from heat and let cool slightly.
- Preheat the oven to 200°C (400°F).
- Roll out the chilled dough on a lightly floured surface into a circle about 3 mm thick. Transfer it to a tart pan or a baking sheet lined with parchment paper.
- Spread the caramelized onions evenly over the crust. Sprinkle with black pepper and nutritional yeast, if using.
- Bake in the preheated oven for 25-30 minutes until the crust is golden and crispy.
- Remove from the oven and allow to cool for a few minutes before slicing. Serve warm, garnished with additional fresh thyme if desired.
