Ingredients

  • Almond milk - 200 ml
  • All-purpose flour - 100 g
  • Powdered sugar - 50 g
  • Cornstarch - 20 g
  • Baking powder - 1 tsp
  • Vanilla extract - 1 tsp
  • Dark rum - 1 tbsp
  • Coconut oil - 30 g (melted)
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, heat the almond milk until warm, then remove from heat and whisk in the melted coconut oil, vanilla extract, and dark rum.
  3. In a mixing bowl, combine the all-purpose flour, powdered sugar, cornstarch, baking powder, and salt.
  4. Gradually pour the warm almond milk mixture into the dry ingredients while whisking to form a smooth batter.
  5. Let the batter rest for 30 minutes to improve texture.
  6. Grease canelé molds with a little coconut oil, ensuring they are well-coated.
  7. Pour the batter into the prepared molds, filling them about 3/4 full.
  8. Bake in the preheated oven for 45 minutes or until the canelés are dark brown and firm to the touch.
  9. Remove from the oven and let cool in the molds for about 10 minutes before inverting onto a wire rack to cool completely.
