- All-purpose flour - 100 g
- Powdered sugar - 50 g
- Cornstarch - 20 g
- Baking powder - 1 tsp
- Vanilla extract - 1 tsp
- Dark rum - 1 tbsp
- Coconut oil - 30 g (melted)
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a saucepan, heat the almond milk until warm, then remove from heat and whisk in the melted coconut oil, vanilla extract, and dark rum.
- In a mixing bowl, combine the all-purpose flour, powdered sugar, cornstarch, baking powder, and salt.
- Gradually pour the warm almond milk mixture into the dry ingredients while whisking to form a smooth batter.
- Let the batter rest for 30 minutes to improve texture.
- Grease canelé molds with a little coconut oil, ensuring they are well-coated.
- Pour the batter into the prepared molds, filling them about 3/4 full.
- Bake in the preheated oven for 45 minutes or until the canelés are dark brown and firm to the touch.
- Remove from the oven and let cool in the molds for about 10 minutes before inverting onto a wire rack to cool completely.
