Ingredients

  • all-purpose flour - 100 grams
  • almond milk - 200 milliliters
  • nutritional yeast - 2 tablespoons
  • olive oil - 2 tablespoons
  • maple syrup - 1 tablespoon
  • baking powder - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • zucchini - 100 grams, grated
  • carrot - 100 grams, grated
  • red bell pepper - 50 grams, diced
  • fresh basil - 2 tablespoons, chopped
  • garlic - 1 clove, minced

Steps

  1. Preheat the oven to 200°C (400°F) and grease a canelé mold with a little olive oil.
  2. In a mixing bowl, combine the all-purpose flour, nutritional yeast, baking powder, salt, and black pepper.
  3. In another bowl, whisk together the almond milk, olive oil, and maple syrup until well mixed.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the grated zucchini, grated carrot, diced red bell pepper, chopped basil, and minced garlic until evenly distributed.
  6. Pour the batter into the prepared canelé mold, filling each cavity about 3/4 full.
  7. Bake in the preheated oven for 30-35 minutes, or until the canelés are golden brown and firm to the touch.
  8. Remove from the oven and allow to cool for a few minutes before carefully removing them from the mold.
  9. Serve warm as a main dish, garnished with additional fresh basil if desired.
