Ingredients
- all-purpose flour - 100 grams
- almond milk - 200 milliliters
- nutritional yeast - 2 tablespoons
- olive oil - 2 tablespoons
- maple syrup - 1 tablespoon
- baking powder - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- zucchini - 100 grams, grated
- carrot - 100 grams, grated
- red bell pepper - 50 grams, diced
- fresh basil - 2 tablespoons, chopped
- garlic - 1 clove, minced
Steps
- Preheat the oven to 200°C (400°F) and grease a canelé mold with a little olive oil.
- In a mixing bowl, combine the all-purpose flour, nutritional yeast, baking powder, salt, and black pepper.
- In another bowl, whisk together the almond milk, olive oil, and maple syrup until well mixed.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the grated zucchini, grated carrot, diced red bell pepper, chopped basil, and minced garlic until evenly distributed.
- Pour the batter into the prepared canelé mold, filling each cavity about 3/4 full.
- Bake in the preheated oven for 30-35 minutes, or until the canelés are golden brown and firm to the touch.
- Remove from the oven and allow to cool for a few minutes before carefully removing them from the mold.
- Serve warm as a main dish, garnished with additional fresh basil if desired.
