Ingredients
- Almond milk - 240 ml
- All-purpose flour - 100 g
- Powdered sugar - 80 g
- Cornstarch - 25 g
- Vanilla extract - 1 tsp
- Rum - 1 tbsp
- Baking powder - 1/2 tsp
- Salt - 1/4 tsp
- Vegetable oil - 2 tbsp
- Aquafaba (chickpea brine) - 60 ml
Steps
- Preheat the oven to 220°C (428°F) and prepare a canelé mold by greasing it with vegetable oil.
- In a mixing bowl, whisk together the almond milk, vegetable oil, vanilla extract, and rum until fully combined.
- In another bowl, sift together the all-purpose flour, powdered sugar, cornstarch, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until smooth and lump-free.
- In a separate bowl, whip the aquafaba until it forms soft peaks, then gently fold it into the batter until well incorporated.
- Pour the batter into the prepared canelé mold, filling each cavity about 3/4 full.
- Bake in the preheated oven for 10 minutes, then reduce the temperature to 180°C (356°F) and continue baking for an additional 40 minutes, until the tops are dark and caramelized.
- Remove the canelés from the oven and let them cool in the mold for 10 minutes before transferring them to a wire rack to cool completely.
