Ingredients

  • Almond milk - 240 ml
  • All-purpose flour - 100 g
  • Powdered sugar - 80 g
  • Cornstarch - 25 g
  • Vanilla extract - 1 tsp
  • Rum - 1 tbsp
  • Baking powder - 1/2 tsp
  • Salt - 1/4 tsp
  • Vegetable oil - 2 tbsp
  • Aquafaba (chickpea brine) - 60 ml

Steps

  1. Preheat the oven to 220°C (428°F) and prepare a canelé mold by greasing it with vegetable oil.
  2. In a mixing bowl, whisk together the almond milk, vegetable oil, vanilla extract, and rum until fully combined.
  3. In another bowl, sift together the all-purpose flour, powdered sugar, cornstarch, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until smooth and lump-free.
  5. In a separate bowl, whip the aquafaba until it forms soft peaks, then gently fold it into the batter until well incorporated.
  6. Pour the batter into the prepared canelé mold, filling each cavity about 3/4 full.
  7. Bake in the preheated oven for 10 minutes, then reduce the temperature to 180°C (356°F) and continue baking for an additional 40 minutes, until the tops are dark and caramelized.
  8. Remove the canelés from the oven and let them cool in the mold for 10 minutes before transferring them to a wire rack to cool completely.
