- Eggs - 2 large
- Sugar - 30 grams
- Butter - 30 grams, melted
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Fresh basil - 10 grams, chopped
- Fresh thyme - 5 grams, chopped
- Zucchini - 100 grams, grated
- Red bell pepper - 50 grams, finely diced
- Parmesan cheese - 40 grams, grated (optional for vegetarian)
Steps
- Preheat the oven to 190°C (375°F) and grease the canelé molds with butter.
- In a mixing bowl, whisk together the flour, sugar, and salt.
- In another bowl, beat the eggs and then add the milk and melted butter, mixing until well combined.
- Gradually add the wet ingredients to the dry mixture, stirring until smooth.
- Fold in the grated zucchini, diced red bell pepper, chopped basil, chopped thyme, and grated Parmesan cheese (if using).
- Let the batter rest for 30 minutes at room temperature.
- Pour the batter into the prepared molds, filling them about three-quarters full.
- Bake in the preheated oven for 25-30 minutes, or until the canelés are golden brown and firm to the touch.
- Remove from the oven and let cool slightly before carefully removing from the molds.
- Serve warm or at room temperature, garnished with additional herbs if desired.
