Canelés de Bordeaux

- Whole milk - 120 ml
- Unsweetened almond milk - 30 ml
- Granulated sugar - 50 g
- Vanilla extract - 1 tsp
- Eggs - 1 large
- All-purpose flour - 40 g
- Baking powder - 1/4 tsp
- Salt - a pinch
- Unsalted margarine - 30 g, melted
Steps
- In a saucepan, combine the whole milk and almond milk. Heat gently until warm but not boiling, then remove from heat.
- In a mixing bowl, whisk together the sugar, vanilla extract, and eggs until light and frothy.
- Sift in the flour, baking powder, and salt, then mix until just combined.
- Slowly incorporate the warm milk mixture into the egg mixture, stirring gently to avoid bubbles.
- Add the melted margarine and mix until smooth. Cover the batter and refrigerate for at least 24 hours to allow flavors to meld.
- Preheat the oven to 220°C (428°F). Grease canelé molds with a non-stick spray or additional melted margarine.
- Pour the chilled batter into the molds, filling them about 3/4 full.
- Bake for 40-45 minutes, or until the canelés are deeply caramelized on the outside and set on the inside.
- Remove from the oven, let cool for a few minutes, then gently remove from the molds.
- Serve warm or at room temperature.
