Ingredients

  • Whole milk - 120 ml
  • Unsweetened almond milk - 30 ml
  • Granulated sugar - 50 g
  • Vanilla extract - 1 tsp
  • Eggs - 1 large
  • All-purpose flour - 40 g
  • Baking powder - 1/4 tsp
  • Salt - a pinch
  • Unsalted margarine - 30 g, melted

Steps

  1. In a saucepan, combine the whole milk and almond milk. Heat gently until warm but not boiling, then remove from heat.
  2. In a mixing bowl, whisk together the sugar, vanilla extract, and eggs until light and frothy.
  3. Sift in the flour, baking powder, and salt, then mix until just combined.
  4. Slowly incorporate the warm milk mixture into the egg mixture, stirring gently to avoid bubbles.
  5. Add the melted margarine and mix until smooth. Cover the batter and refrigerate for at least 24 hours to allow flavors to meld.
  6. Preheat the oven to 220°C (428°F). Grease canelé molds with a non-stick spray or additional melted margarine.
  7. Pour the chilled batter into the molds, filling them about 3/4 full.
  8. Bake for 40-45 minutes, or until the canelés are deeply caramelized on the outside and set on the inside.
  9. Remove from the oven, let cool for a few minutes, then gently remove from the molds.
  10. Serve warm or at room temperature.
