  • Chickpea flour - 50 grams
  • Olive oil - 30 milliliters
  • Fresh parsley - 15 grams, chopped
  • Fresh thyme - 5 grams, chopped
  • Garlic - 1 clove, minced
  • Salt - 5 grams
  • Black pepper - 2 grams
  • Zucchini - 50 grams, finely grated
  • Carrot - 50 grams, finely grated
  • Nutritional yeast - 10 grams

Steps

  1. Preheat your oven to 180°C (350°F). Grease two canelé molds with olive oil.
  2. In a mixing bowl, combine the all-purpose flour, chickpea flour, salt, and black pepper.
  3. In a separate bowl, whisk together the almond milk, olive oil, minced garlic, and nutritional yeast until well combined.
  4. Gradually pour the wet mixture into the dry ingredients, stirring until you achieve a smooth batter.
  5. Fold in the grated zucchini, grated carrot, chopped parsley, and thyme until evenly distributed.
  6. Pour the batter into the prepared canelé molds, filling them about three-quarters full.
  7. Bake in the preheated oven for 30-35 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
  8. Remove from the oven and let the canelés cool in the molds for about 5 minutes before carefully unmolding them.
  9. Serve warm or at room temperature, garnished with additional herbs if desired.
