- Fresh thyme - 5 grams, chopped
- Garlic - 1 clove, minced
- Salt - 5 grams
- Black pepper - 2 grams
- Zucchini - 50 grams, finely grated
- Carrot - 50 grams, finely grated
- Nutritional yeast - 10 grams
Steps
- Preheat your oven to 180°C (350°F). Grease two canelé molds with olive oil.
- In a mixing bowl, combine the all-purpose flour, chickpea flour, salt, and black pepper.
- In a separate bowl, whisk together the almond milk, olive oil, minced garlic, and nutritional yeast until well combined.
- Gradually pour the wet mixture into the dry ingredients, stirring until you achieve a smooth batter.
- Fold in the grated zucchini, grated carrot, chopped parsley, and thyme until evenly distributed.
- Pour the batter into the prepared canelé molds, filling them about three-quarters full.
- Bake in the preheated oven for 30-35 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
- Remove from the oven and let the canelés cool in the molds for about 5 minutes before carefully unmolding them.
- Serve warm or at room temperature, garnished with additional herbs if desired.
