- All-purpose flour - 60 grams
- Almond milk - 200 ml
- Maple syrup - 40 grams
- Aquafaba (chickpea brine) - 30 ml
- Vanilla extract - 1 teaspoon
- Brown sugar - 20 grams
- Cornstarch - 10 grams
- Salt - 1/4 teaspoon
- Coconut oil (melted) - 15 grams
Steps
- In a mixing bowl, whisk together the all-purpose flour, cornstarch, brown sugar, and salt until well combined.
- In another bowl, combine the almond milk, maple syrup, aquafaba, vanilla extract, and melted coconut oil, and mix well.
- Gradually pour the wet ingredients into the dry ingredients, whisking until smooth and lump-free.
- Cover the batter and refrigerate for at least 24 hours to allow the flavors to develop.
- Preheat the oven to 220°C (428°F) and grease your canelé molds with coconut oil.
- Pour the chilled batter into the prepared molds, filling them about 3/4 full.
- Bake for 40-45 minutes until the canelés are dark brown and caramelized on the outside.
- Remove from the oven and let cool for 10 minutes before gently removing them from the molds.
- Allow to cool completely on a wire rack before serving.
