- Almond flour - 120 grams
- Eggs - 2 large
- Honey - 30 grams
- Coconut milk - 100 ml
- Vanilla extract - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, whisk together the eggs and honey until well combined.
- Add the coconut milk and vanilla extract to the egg mixture and mix until smooth.
- In another bowl, combine the almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Grease canelé molds with coconut oil, ensuring each mold is well coated.
- Pour the batter into the prepared molds, filling them about 3/4 full.
- Bake in the preheated oven for 30 minutes or until the tops are golden brown and the edges are crisp.
- Remove from the oven and let cool for 5 minutes before gently removing from the molds.
- Serve warm, optionally drizzled with additional honey.
