Ingredients

  • Almond flour - 120 grams
  • Eggs - 2 large
  • Honey - 30 grams
  • Coconut milk - 100 ml
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, whisk together the eggs and honey until well combined.
  3. Add the coconut milk and vanilla extract to the egg mixture and mix until smooth.
  4. In another bowl, combine the almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Grease canelé molds with coconut oil, ensuring each mold is well coated.
  7. Pour the batter into the prepared molds, filling them about 3/4 full.
  8. Bake in the preheated oven for 30 minutes or until the tops are golden brown and the edges are crisp.
  9. Remove from the oven and let cool for 5 minutes before gently removing from the molds.
  10. Serve warm, optionally drizzled with additional honey.
