Ingredients
- Pork sausage meat - 200 grams
- Fresh spinach - 100 grams, chopped
- Eggs - 4 large
- Parmesan cheese - 50 grams, grated
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and set aside.
- In a mixing bowl, combine the pork sausage meat, wilted spinach, grated Parmesan cheese, chopped thyme, salt, and black pepper. Mix until ingredients are well incorporated.
- In another bowl, beat the eggs until smooth. Reserve half of the egg mixture for later.
- In a greased baking dish, spread the sausage and spinach mixture evenly. Pour the remaining half of the beaten eggs over the top.
- Drizzle the reserved beaten egg mixture over the sausage and spinach mixture to create a layered effect.
- Bake in the preheated oven for 20-25 minutes or until the egg is set and lightly golden on top.
- Let it cool for a few minutes, then slice and serve warm.
