Ingredients

  • Pork sausage meat - 200 grams
  • Fresh spinach - 100 grams, chopped
  • Eggs - 4 large
  • Parmesan cheese - 50 grams, grated
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and set aside.
  4. In a mixing bowl, combine the pork sausage meat, wilted spinach, grated Parmesan cheese, chopped thyme, salt, and black pepper. Mix until ingredients are well incorporated.
  5. In another bowl, beat the eggs until smooth. Reserve half of the egg mixture for later.
  6. In a greased baking dish, spread the sausage and spinach mixture evenly. Pour the remaining half of the beaten eggs over the top.
  7. Drizzle the reserved beaten egg mixture over the sausage and spinach mixture to create a layered effect.
  8. Bake in the preheated oven for 20-25 minutes or until the egg is set and lightly golden on top.
  9. Let it cool for a few minutes, then slice and serve warm.
