- 150g cooked lentils
- 100g carrots, finely diced
- 100g zucchini, grated
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 50g breadcrumbs
- 50g grated Parmesan cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 large eggs
- 2 tablespoons fresh parsley, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the diced carrots and grated zucchini to the skillet, cooking for about 5 minutes until softened.
- Stir in the chopped spinach and cook until wilted, about 3 minutes.
- In a large bowl, combine the cooked lentils, sautéed vegetables, breadcrumbs, grated Parmesan, thyme, oregano, salt, and pepper.
- Beat the eggs in a separate bowl and add them to the lentil mixture, stirring until well combined.
- Transfer the mixture to a greased baking dish, pressing it down evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and set.
- Remove from the oven, garnish with fresh parsley, and let cool for a few minutes before slicing and serving.
