  • 300g fresh spinach, chopped
  • 150g cooked lentils
  • 100g carrots, finely diced
  • 100g zucchini, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 50g breadcrumbs
  • 50g grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 large eggs
  • 2 tablespoons fresh parsley, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the diced carrots and grated zucchini to the skillet, cooking for about 5 minutes until softened.
  4. Stir in the chopped spinach and cook until wilted, about 3 minutes.
  5. In a large bowl, combine the cooked lentils, sautéed vegetables, breadcrumbs, grated Parmesan, thyme, oregano, salt, and pepper.
  6. Beat the eggs in a separate bowl and add them to the lentil mixture, stirring until well combined.
  7. Transfer the mixture to a greased baking dish, pressing it down evenly.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and set.
  9. Remove from the oven, garnish with fresh parsley, and let cool for a few minutes before slicing and serving.
