  • Lentils (cooked) - 200 grams
  • Chickpeas (cooked) - 100 grams
  • Carrot (grated) - 1 medium
  • Zucchini (grated) - 1 medium
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Fresh parsley (chopped) - 2 tablespoons
  • Fresh thyme (chopped) - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Ground flaxseed - 1 tablespoon
  • Water - 3 tablespoons
  • Almond flour - 100 grams
  • Salt - to taste
  • Black pepper - to taste
  • Whole wheat pastry dough - 1 sheet

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the cooked lentils and chickpeas, and mash them lightly with a fork, leaving some texture.
  3. Add the grated carrot, grated zucchini, chopped onion, minced garlic, parsley, thyme, nutritional yeast, ground flaxseed mixed with water, and season with salt and pepper. Mix well until combined.
  4. Roll out the whole wheat pastry dough on a lightly floured surface to fit your baking dish.
  5. Transfer the lentil and vegetable mixture onto the center of the pastry dough and shape it into a log.
  6. Fold the dough over the filling, sealing the edges well to form a tight package.
  7. Place the wrapped caillette on a baking tray lined with parchment paper, brush the top with olive oil, and make a few slits on top for ventilation.
  8. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
  9. Remove from the oven, allow to cool slightly, and slice into servings.
