- Chickpeas (cooked) - 100 grams
- Carrot (grated) - 1 medium
- Zucchini (grated) - 1 medium
- Onion (finely chopped) - 1 small
- Garlic (minced) - 2 cloves
- Fresh parsley (chopped) - 2 tablespoons
- Fresh thyme (chopped) - 1 teaspoon
- Olive oil - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Ground flaxseed - 1 tablespoon
- Water - 3 tablespoons
- Almond flour - 100 grams
- Salt - to taste
- Black pepper - to taste
- Whole wheat pastry dough - 1 sheet
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the cooked lentils and chickpeas, and mash them lightly with a fork, leaving some texture.
- Add the grated carrot, grated zucchini, chopped onion, minced garlic, parsley, thyme, nutritional yeast, ground flaxseed mixed with water, and season with salt and pepper. Mix well until combined.
- Roll out the whole wheat pastry dough on a lightly floured surface to fit your baking dish.
- Transfer the lentil and vegetable mixture onto the center of the pastry dough and shape it into a log.
- Fold the dough over the filling, sealing the edges well to form a tight package.
- Place the wrapped caillette on a baking tray lined with parchment paper, brush the top with olive oil, and make a few slits on top for ventilation.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
- Remove from the oven, allow to cool slightly, and slice into servings.
