Ingredients

  • Puff pastry - 200 grams
  • Spinach - 150 grams, fresh
  • Ricotta cheese - 100 grams
  • Feta cheese - 50 grams, crumbled
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the ricotta cheese, crumbled feta cheese, chopped parsley, chopped thyme, salt, and black pepper. Mix well.
  5. Add the sautéed spinach mixture to the cheese mixture and stir until combined.
  6. Roll out the puff pastry on a lightly floured surface to about 3mm thickness. Cut into two equal rectangles, approximately 15cm x 20cm each.
  7. Place half of the filling mixture in the center of each pastry rectangle, leaving a border around the edges.
  8. Fold the pastry over to encase the filling, pressing the edges to seal. You can use a fork to crimp the edges for a decorative touch.
  9. Brush the top of each pastry with the beaten egg to give it a golden finish.
  10. Place the pastries on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes, or until golden brown.
  11. Remove from oven and let cool slightly before serving.
