Ingredients
- Puff pastry - 200 grams
- Spinach - 150 grams, fresh
- Ricotta cheese - 100 grams
- Feta cheese - 50 grams, crumbled
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 teaspoon, chopped
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the ricotta cheese, crumbled feta cheese, chopped parsley, chopped thyme, salt, and black pepper. Mix well.
- Add the sautéed spinach mixture to the cheese mixture and stir until combined.
- Roll out the puff pastry on a lightly floured surface to about 3mm thickness. Cut into two equal rectangles, approximately 15cm x 20cm each.
- Place half of the filling mixture in the center of each pastry rectangle, leaving a border around the edges.
- Fold the pastry over to encase the filling, pressing the edges to seal. You can use a fork to crimp the edges for a decorative touch.
- Brush the top of each pastry with the beaten egg to give it a golden finish.
- Place the pastries on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes, or until golden brown.
- Remove from oven and let cool slightly before serving.
