- Quail - 2 whole (about 300g each)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh thyme - 2 teaspoons, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Lemon - 1, zested and juiced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 100 ml
- Fresh parsley - for garnish
Steps
- Preheat the BBQ grill to medium-high heat.
- In a small bowl, mix olive oil, minced garlic, chopped thyme, chopped rosemary, lemon zest, lemon juice, salt, and black pepper to create a marinade.
- Place the quails in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
- Once marinated, place the quails on the grill, breast side down, and cook for about 15 minutes.
- Turn the quails over and add vegetable broth to the grill, allowing it to steam while cooking for another 15 minutes, or until the internal temperature reaches 75°C.
- Remove the quails from the grill and let them rest for 5 minutes before serving.
- Garnish with fresh parsley and serve with a side of grilled vegetables or a fresh salad.
