Ingredients

  • Quail - 2 whole (about 300g each)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 2 teaspoons, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Lemon - 1, zested and juiced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 100 ml
  • Fresh parsley - for garnish

Steps

  1. Preheat the BBQ grill to medium-high heat.
  2. In a small bowl, mix olive oil, minced garlic, chopped thyme, chopped rosemary, lemon zest, lemon juice, salt, and black pepper to create a marinade.
  3. Place the quails in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. Once marinated, place the quails on the grill, breast side down, and cook for about 15 minutes.
  5. Turn the quails over and add vegetable broth to the grill, allowing it to steam while cooking for another 15 minutes, or until the internal temperature reaches 75°C.
  6. Remove the quails from the grill and let them rest for 5 minutes before serving.
  7. Garnish with fresh parsley and serve with a side of grilled vegetables or a fresh salad.
