Ingredients

  • Quail - 2 whole (about 300g each)
  • Olive oil - 2 tablespoons
  • Shallots - 2, finely chopped
  • Garlic - 1 clove, minced
  • Fresh thyme - 2 sprigs
  • Chicken broth - 200 ml
  • Red wine - 100 ml
  • Fresh grapes - 150g, halved
  • Butter - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium-high heat. Season the quail with salt and pepper, then add them to the skillet, browning them on all sides for about 5-6 minutes.
  3. Remove the quail from the skillet and set aside. In the same skillet, add the shallots and garlic, sautéing until softened, about 3 minutes.
  4. Deglaze the skillet with red wine, scraping up any brown bits, and let it simmer for 3-4 minutes until it reduces slightly.
  5. Add the chicken broth and thyme to the skillet, bringing it to a gentle simmer.
  6. Return the quail to the skillet, spooning some of the sauce over them. Cover the skillet and transfer it to the preheated oven. Bake for 20 minutes.
  7. After 20 minutes, add the halved grapes to the skillet and return it to the oven, uncovered, for an additional 10 minutes.
  8. Remove from the oven, transfer the quail to a serving platter, and stir in the butter to the sauce until melted. Pour the sauce with grapes over the quail and serve immediately.
