Ingredients
- Ground beef (80/20) - 250 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Goat cheese - 60 grams
- Fresh thyme - 1 teaspoon, chopped
- Dijon mustard - 2 teaspoons
- Mayonnaise - 2 tablespoons
- Brioche buns - 2
- Arugula - 50 grams
- Shallots - 1, thinly sliced
- Olive oil - 1 tablespoon
Steps
- In a bowl, mix the ground beef with salt and black pepper, then form into two equal patties.
- Heat a non-stick skillet over medium heat and add olive oil. Sauté the sliced shallots until they are golden brown, about 5-7 minutes. Remove from heat and set aside.
- In the same skillet, cook the beef patties for about 4-5 minutes per side for medium doneness, adding a slice of goat cheese on top of each patty in the last minute to melt.
- While the patties are cooking, combine Dijon mustard and mayonnaise in a small bowl to create the aioli.
- Toast the brioche buns lightly in the skillet until golden.
- To assemble, spread the aioli on the bottom half of each bun, add arugula, place the cooked patty with melted goat cheese on top, and finish with sautéed shallots before closing with the top bun.
- Serve immediately with your choice of side.
