Ingredients

  • Green cabbage - 4 large leaves
  • Quinoa - 100 grams
  • Vegetable broth - 250 milliliters
  • Red bell pepper - 1, diced
  • Carrot - 1, grated
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Barbecue sauce - 100 milliliters
  • Fresh parsley - for garnish

Steps

  1. Prepare the cabbage leaves by blanching them in boiling water for 2-3 minutes until tender. Remove and set aside to cool.
  2. Rinse the quinoa under cold water and cook it in vegetable broth according to package instructions, usually about 15 minutes until fluffy.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  4. Add the diced red bell pepper, grated carrot, smoked paprika, thyme, salt, and black pepper to the skillet. Cook for an additional 5 minutes until the vegetables are softened.
  5. Combine the cooked quinoa with the vegetable mixture in the skillet. Mix thoroughly and adjust seasoning if necessary.
  6. Take one cabbage leaf and place about 2-3 tablespoons of the quinoa filling at the base. Roll it up tightly, tucking in the sides, and place it seam-side down in a lightly greased baking dish. Repeat with remaining leaves and filling.
  7. Preheat your grill or oven to 180°C (350°F). Brush the cabbage rolls with barbecue sauce and grill or bake for about 20 minutes, turning once and basting with more sauce halfway through.
  8. Once cooked, remove from heat and let cool slightly. Garnish with fresh parsley before serving.
