Ingredients

  • Lamb chops - 4 pieces (about 250g each)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Seasonal vegetables (e.g., zucchini, bell peppers, asparagus) - 300g

Steps

  1. In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice to create a marinade.
  2. Place the lamb chops in the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
  3. While the lamb is marinating, prepare the seasonal vegetables by washing and cutting them into bite-sized pieces.
  4. Preheat a grill or a grill pan over medium-high heat.
  5. Remove the lamb chops from the marinade and grill them for about 4-5 minutes on each side for medium-rare, or until desired doneness.
  6. In the same grill or a separate pan, add the seasonal vegetables and grill for 5-7 minutes until they are tender and slightly charred.
  7. Once cooked, remove the lamb chops and vegetables from the grill, and let the lamb rest for a few minutes before serving.
  8. Serve the lamb chops alongside the grilled vegetables, garnished with additional fresh herbs if desired.
