  • Celeriac (celery root) - 300 grams
  • Lemon juice - 2 tablespoons
  • Mayonnaise - 4 tablespoons
  • Dijon mustard - 1 tablespoon
  • Capers - 1 tablespoon, chopped
  • Cornichons (small pickles) - 2 tablespoons, chopped
  • Fresh parsley - 1 tablespoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Peel the celeriac using a sharp knife and cut it into thin matchstick pieces or grate it using a box grater.
  2. Place the shredded celeriac in a bowl and toss it with the lemon juice to prevent browning.
  3. In a separate bowl, combine the mayonnaise, Dijon mustard, chopped capers, chopped cornichons, and chopped parsley. Mix well until smooth.
  4. Add the lemon-juiced celeriac to the mayonnaise mixture, and stir until the celeriac is well coated.
  5. Season with salt and black pepper to taste, and mix again.
