- Vegetable stock - 250 ml
- Bay leaf - 1
- Thyme - 1 teaspoon, fresh or 1/2 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Parsley - 1 tablespoon, chopped (for garnish)
Steps
- In a large skillet, heat the butter and olive oil over medium heat until the butter is melted.
- Add the chopped shallots and minced garlic to the skillet, sautéing until they become translucent, about 3-4 minutes.
- Add the celery pieces to the skillet, stirring to coat them in the butter and oil mixture. Cook for about 5 minutes, allowing the celery to slightly brown.
- Pour in the vegetable stock and add the bay leaf and thyme. Season with salt and black pepper to taste.
- Bring the mixture to a gentle simmer, then cover the skillet with a lid. Allow the celery to braise for 25-30 minutes, or until it is tender but still holds its shape.
- Once cooked, remove the bay leaf and adjust seasoning if necessary. Serve warm, garnished with chopped parsley.
