  • Olive oil - 1 tablespoon
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable stock - 250 ml
  • Bay leaf - 1
  • Thyme - 1 teaspoon, fresh or 1/2 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large skillet, heat the butter and olive oil over medium heat until the butter is melted.
  2. Add the chopped shallots and minced garlic to the skillet, sautéing until they become translucent, about 3-4 minutes.
  3. Add the celery pieces to the skillet, stirring to coat them in the butter and oil mixture. Cook for about 5 minutes, allowing the celery to slightly brown.
  4. Pour in the vegetable stock and add the bay leaf and thyme. Season with salt and black pepper to taste.
  5. Bring the mixture to a gentle simmer, then cover the skillet with a lid. Allow the celery to braise for 25-30 minutes, or until it is tender but still holds its shape.
  6. Once cooked, remove the bay leaf and adjust seasoning if necessary. Serve warm, garnished with chopped parsley.
