Ingredients

  • Ground beef (kosher) - 500 grams
  • Burgundy red wine - 120 ml
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Mushrooms (cremini or button) - 200 grams, sliced
  • Dijon mustard - 2 tablespoons
  • Mayonnaise - 2 tablespoons
  • Burger buns (kosher) - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced

Steps

  1. In a bowl, combine the ground beef, Burgundy wine, shallots, garlic, thyme, salt, and black pepper. Mix gently until just combined.
  2. Form the mixture into 2 equal patties, about 2 cm thick. Refrigerate for 15 minutes to firm up.
  3. While the patties chill, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté until golden brown, about 5-7 minutes. Season with salt and pepper, then set aside.
  4. In a small bowl, mix together Dijon mustard and mayonnaise to create the sauce.
  5. Preheat a grill or skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on each side for medium doneness, or until desired doneness is reached.
  6. Toast the burger buns on the grill or in a toaster until golden brown.
  7. Assemble the burgers: spread the Dijon mayonnaise on the bottom half of the bun, add a lettuce leaf, place the cooked patty on top, add sautéed mushrooms, and top with tomato slices. Finish with the top half of the bun.
  8. Serve immediately with your favorite side.
