Ingredients

  • Chicken breast - 300 grams
  • Red bell pepper - 1 medium
  • Garlic - 2 cloves
  • Onion - 1 small
  • Paprika - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Whole grain burger buns - 2
  • Romaine lettuce - 2 leaves
  • Tomato - 1 medium, sliced
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Cut the red bell pepper in half and remove the seeds. Place it cut-side down on a baking sheet and roast in the oven for about 20 minutes until the skin is charred.
  3. While the pepper is roasting, finely chop the onion and garlic. In a skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
  4. Dice the chicken breast into small pieces and add to the skillet. Season with paprika, salt, and black pepper. Cook until the chicken is browned and fully cooked, about 7-10 minutes.
  5. Once the red pepper is roasted, let it cool slightly, then peel off the skin and blend it with a pinch of salt and fresh basil to create a smooth sauce.
  6. To assemble the burgers, place a lettuce leaf on the bottom half of each whole grain bun, add a chicken patty, top with a slice of tomato, and drizzle with the roasted red pepper sauce. Add the top half of the bun.
  7. Serve immediately with your choice of side.
