Ingredients
- Chicken breast - 300 grams
- Red bell pepper - 1 medium
- Garlic - 2 cloves
- Onion - 1 small
- Paprika - 1 teaspoon
- Olive oil - 1 tablespoon
- Whole grain burger buns - 2
- Romaine lettuce - 2 leaves
- Tomato - 1 medium, sliced
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful
Steps
- Preheat the oven to 200°C (390°F).
- Cut the red bell pepper in half and remove the seeds. Place it cut-side down on a baking sheet and roast in the oven for about 20 minutes until the skin is charred.
- While the pepper is roasting, finely chop the onion and garlic. In a skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
- Dice the chicken breast into small pieces and add to the skillet. Season with paprika, salt, and black pepper. Cook until the chicken is browned and fully cooked, about 7-10 minutes.
- Once the red pepper is roasted, let it cool slightly, then peel off the skin and blend it with a pinch of salt and fresh basil to create a smooth sauce.
- To assemble the burgers, place a lettuce leaf on the bottom half of each whole grain bun, add a chicken patty, top with a slice of tomato, and drizzle with the roasted red pepper sauce. Add the top half of the bun.
- Serve immediately with your choice of side.
