Ingredients

  • Duck breast - 300 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Brioche buns - 2 pieces
  • Fresh arugula - 50 grams
  • Cherry preserves - 50 grams
  • Red onion - 1 small, thinly sliced
  • Olive oil - 1 tablespoon

Steps

  1. Preheat a skillet over medium-high heat.
  2. Score the skin of the duck breast in a crisscross pattern, making sure not to cut into the meat.
  3. Season both sides of the duck breast with salt, black pepper, and garlic powder.
  4. Place the duck breast skin-side down in the hot skillet and cook for about 6-8 minutes, allowing the fat to render and the skin to crisp up.
  5. Flip the duck breast and cook for an additional 4-6 minutes, or until the internal temperature reaches 55-60°C for medium-rare.
  6. Remove the duck from the skillet and let it rest for 5 minutes before slicing it thinly.
  7. While the duck is resting, toast the brioche buns in the skillet until golden brown.
  8. Spread a layer of cherry preserves on the bottom half of each toasted brioche bun.
  9. Top with sliced duck breast, a few slices of red onion, and a handful of arugula.
  10. Cover with the top half of the brioche bun, serve immediately, and enjoy.
