- Duck breast - 300 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Brioche buns - 2 pieces
- Fresh arugula - 50 grams
- Cherry preserves - 50 grams
- Red onion - 1 small, thinly sliced
- Olive oil - 1 tablespoon
Steps
- Preheat a skillet over medium-high heat.
- Score the skin of the duck breast in a crisscross pattern, making sure not to cut into the meat.
- Season both sides of the duck breast with salt, black pepper, and garlic powder.
- Place the duck breast skin-side down in the hot skillet and cook for about 6-8 minutes, allowing the fat to render and the skin to crisp up.
- Flip the duck breast and cook for an additional 4-6 minutes, or until the internal temperature reaches 55-60°C for medium-rare.
- Remove the duck from the skillet and let it rest for 5 minutes before slicing it thinly.
- While the duck is resting, toast the brioche buns in the skillet until golden brown.
- Spread a layer of cherry preserves on the bottom half of each toasted brioche bun.
- Top with sliced duck breast, a few slices of red onion, and a handful of arugula.
- Cover with the top half of the brioche bun, serve immediately, and enjoy.
