  • Fresh parsley - 2 tablespoons, chopped
  • Dijon mustard - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 medium, sliced
  • Pickles - 4 slices
  • Mustard aioli - 2 tablespoons (made with 1 tablespoon Dijon mustard, 2 tablespoons mayonnaise, and 1 teaspoon lemon juice)

Steps

  1. In a mixing bowl, combine the ground beef, chopped shallot, minced garlic, parsley, Dijon mustard, salt, and black pepper. Mix until just combined.
  2. Divide the mixture into two equal portions and shape them into patties, about 1.5 cm thick.
  3. Heat olive oil in a skillet over medium-high heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until they reach your desired doneness.
  4. While the patties are cooking, prepare the mustard aioli by mixing the Dijon mustard, mayonnaise, and lemon juice in a small bowl.
  5. Toast the whole wheat burger buns in a toaster or on a dry skillet until golden brown.
  6. Assemble the burgers by spreading a tablespoon of mustard aioli on each bun bottom, adding a lettuce leaf, the cooked patty, tomato slices, and pickles. Top with the bun lid.
