Burger Végétal

Ingredients
- Lentils - 100 grams
- Carrot - 1 medium, grated
- Zucchini - 1 small, grated
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Oats - 50 grams, ground
- Flaxseed meal - 1 tablespoon
- Water - 2 tablespoons
- Soy sauce - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Brioche buns - 2
- Avocado - 1, mashed
- Lettuce leaves - 2
- Tomato - 1, sliced
Steps
- Rinse the lentils under cold water and cook them in a pot with 300 ml of water for about 20 minutes or until tender. Drain and set aside.
- In a large bowl, combine the cooked lentils, grated carrot, grated zucchini, chopped red onion, minced garlic, ground oats, flaxseed meal mixed with water, soy sauce, smoked paprika, cumin, salt, and pepper. Mix well until combined.
- Form the mixture into 2 patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, mash the avocado in a small bowl and season with salt and pepper.
- Toast the brioche buns lightly on the skillet for 1-2 minutes.
- Assemble the burgers by spreading the mashed avocado on the bottom half of each bun, adding the lentil patties, lettuce leaves, and sliced tomato. Top with the other half of the bun and serve.
