- Zucchini - 1 medium (about 200 grams, grated)
- Red bell pepper - 1 medium (about 150 grams, finely chopped)
- Garlic - 2 cloves (minced)
- Fresh basil - 30 grams (chopped)
- Fresh thyme - 1 teaspoon (chopped)
- Egg - 1 large
- Breadcrumbs - 100 grams
- Goat cheese - 100 grams (crumbled)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Burger buns - 2 (preferably whole grain)
- Mixed salad greens - 30 grams
- Tomato - 1 medium (sliced)
- Red onion - 1/4 medium (thinly sliced)
Steps
- In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the grated zucchini, chopped red bell pepper, minced garlic, chopped basil, thyme, egg, breadcrumbs, salt, and black pepper to the mashed chickpeas. Mix well until all ingredients are combined.
- Form the mixture into two equal-sized patties, ensuring they hold together well.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the patties and cook for about 5-6 minutes on each side, or until golden brown and crisp.
- While the patties are cooking, toast the burger buns in a separate pan or toaster until lightly browned.
- Assemble the burgers by placing each patty on a bun, topped with crumbled goat cheese, salad greens, tomato slices, and red onion.
- Drizzle with a little olive oil or your favorite dressing if desired, then serve immediately.
