  • Zucchini - 1 medium (about 200 grams, grated)
  • Red bell pepper - 1 medium (about 150 grams, finely chopped)
  • Garlic - 2 cloves (minced)
  • Fresh basil - 30 grams (chopped)
  • Fresh thyme - 1 teaspoon (chopped)
  • Egg - 1 large
  • Breadcrumbs - 100 grams
  • Goat cheese - 100 grams (crumbled)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Burger buns - 2 (preferably whole grain)
  • Mixed salad greens - 30 grams
  • Tomato - 1 medium (sliced)
  • Red onion - 1/4 medium (thinly sliced)

Steps

  1. In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the grated zucchini, chopped red bell pepper, minced garlic, chopped basil, thyme, egg, breadcrumbs, salt, and black pepper to the mashed chickpeas. Mix well until all ingredients are combined.
  3. Form the mixture into two equal-sized patties, ensuring they hold together well.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the patties and cook for about 5-6 minutes on each side, or until golden brown and crisp.
  5. While the patties are cooking, toast the burger buns in a separate pan or toaster until lightly browned.
  6. Assemble the burgers by placing each patty on a bun, topped with crumbled goat cheese, salad greens, tomato slices, and red onion.
