- Zucchini - 100g, diced
- Eggplant - 100g, diced
- Red bell pepper - 50g, diced
- Yellow onion - 50g, diced
- Garlic - 2 cloves, minced
- Tomato - 100g, diced
- Olive oil - 2 tablespoons
- Fresh basil - 10g, chopped
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Burger buns - 2 pieces
- Cheese (optional, Halal) - 2 slices
Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and garlic, and sauté until translucent, about 3-4 minutes.
- Add the zucchini, eggplant, and red bell pepper to the skillet. Sauté for another 5-7 minutes until the vegetables are tender.
- Stir in the diced tomato, thyme, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld. Remove from heat and stir in the chopped basil.
- In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Cook the Halal beef patties for about 4-5 minutes on each side until they reach desired doneness.
- Toast the burger buns lightly in the same skillet or a toaster.
- Assemble the burgers by placing a beef patty on each bun, topping with the ratatouille mixture, and adding a slice of cheese if desired. Close the buns and serve immediately.
